How NOT to make Nachos


This is getting posted a few days late but its been absolutely GORGEOUS outside this week so I have not been online as much lately!!

A quick easy and tasty dish that I noticed my friend makes is Nachos. Cheese Nachos. YUM!! I have been horrible about making dinner lately I don't know I just lost my mojo or something. SO I thought I would surprise my husband with Nachos with cheese, queso con salsa, black beans, and ground turkey.

First, I preheated my oven to 350 degrees. Then I sprayed a 13x9 pan with Pam, dumped a bag of Scoops in and then made my fatal mistake. I dumped 3/4 of a jar of Queso con Salsa on them. Hey, its cheese, right? WRONG! I proceeded to add the beans, turkey, and sprinkled some cheese on it. Just a little cheese, since there was so much QUESO on it!! I popped the whole thing in the oven for 10 minutes.

When I took it out, it looked delish. Then I took a bite. Wherever there was Queso, it was MUSHY and gross!!

Luckily my friend who inspired me to make this walked in and said "Ohh. You aren't supposed to put the Queso on till AFTER!" WHOOPS.

So the proper way to make Nachos con Queso is to bake it with only the cheese (use more than I did), the beans, and the meat. THEN dip it in Queso after (and sour cream...oohlala) so that everything stays crunchy!!

Daylight Saving, WTH!!

Sorry for the acronymed curse word ( I coulda used worse! ) But MAN oh MAN why do we keep torturing ourselves with this???

My son came home the other day and quizzed me:

"Mom, do we have daylight savings time because A) It helps farmers, B) It reduces crime, C) It helps cops, or D) because of war."

I said "Because of the farmers, of course. Everyone knows that."

Yeah, I'm NOT smarter than a third grader. I get an F on that quiz. The answer is all of the above EXCEPT "A"!! Oh and apparently it helps Trick or Treaters get home before dark. Harumph.

Perhaps it was because I was brought up in a farming community that we were taught this reason? I had never heard of the others.

Field Trippin'

Yesterday I got to go on my first field trip with my kids' school. We went to the Flynn Theater (of which I have many fond memories from my childhood) to see the Mermaid Theatre's presentation of Eric Carle's Very Hungry Caterpillar, The Mixed-Up Chameleon, and Little Cloud. I LOVE Eric Carle's stories and artwork so I was excited to go actually!

Well let me tell YOU it was beyond what I expected! Black Light Puppetry is what they performed, and the hippie in me was like a kid at Christmas!!! Except for the little girl who sat behind me alternating between crying for her daddy (who was sitting a few rows down) and laughing like a seal in my EAR it was extremely enjoyable. Unlike anything I've ever seen before. I wish I could go watch it again it was so cool!! I brought Autumn with me (as I have no choice lol) and she actually watched the first 10 minutes or so and then nursed and passed out for the rest of the show...well, until the girl next to me bumped her head with her elbow anyway. Let me tell you that the Flynn's seats are NOT conducive to nursing a giant baby while sandwiched between various little girls jumping and clapping.

What I thought was the best was that there are only 3 people who put on this show and they work in such harmony together that you have NO idea what they are doing or how they are doing it or that they are even there! They wear all black (even face masks made of black hosiery) and turn the lights way down, and then they are basically standing right in front of you with these puppets and you can't even see them. The colors are so bright and mesmerizing and the motion so fluid that you have to wonder if there isn't some kind of mechanism they are using. They anticipate this reaction, as the last 15 minutes or so involves them turning the lights up and explaining the entire process (which kind of ruined the magic but whatever). They let the kids ask a few questions as well.

And no, I didn't bring my camera in dangit!! I didn't know if they would allow it and my camera is precious to me right now so I didnt want to chance leaving it with someone if not. BUT I totally could have brought it so now I'm kicking myself for not at least bringing the point and shoot!!!!

Eeeeeeeeee!! I got a new camera!!!

Wow I have not posted a blog in a while. Much has happened. To sum it up:

I got me a Canon Rebel XSi!!!!!!

And I totally love it. Not that my point and shoot Canon PowerShot wasn't fantastic. But this camera takes me to a whole new level!

So you can see the difference in the mood and feel of the pictures! I have been taking pictures like crazy. The difference is that I never enjoyed taking pictures of people before because I never felt they really did anyone any justice. But this kind of camera has a faster shutter speed and truer coloring and can capture a moment unlike your standard point and shoot. I'm really excited for summer now!! I hope that it does as well on landscapes.

We have had such a cold wind the past couple of days that even though its been beautiful I haven't been able to take the baby out. We finally have recovered from this last bout of illness I hope. I'm going to go for a short walk to the cemetery with Alex and see if I can spot anything interesting over there...
