I spent most of this morning full of resolve to get some housework done before getting online and getting lost in my day. I did manage to....hmmm well it seems I cannot remember exactly what it might be that I actually did. I'm pretty sure that I ate breakfast though. And perhaps I ... oh yes I called the collection agency and they blessed me for letting them know I was going to pay off a medical bill that I'd been slowing chipping away at for the last almost 3 years. I think the woman on the other end of the phone would have kissed me if she could have. Apparently they don't get that a lot.
Alright well I guess I didn't really do a dang thing this morning. I visited my friend for a couple of hours, had a cup of coffee, and then at 1 o'clock realized that I really needed to get back into making dinner again. It had been 3 days since I have actually cooked a meal and I was on a pretty good streak there. I got lazy. Monday night I promise the kids Lasagne (or is it lasagna?) and had full intention of making it from scratch which is something that feels waaaay out of my league. Alex had been begging me to make it for several days so when it suddenly was 4:30 and I still hadn't started it I couldn't let the kid down. I went to the store to get "ingredients" and they went to their Dad's for a bit. When they got home I had magically Stouffered a beautiful delicious tray of Lasagna! Well, actually I bought it, ran into the house and threw it at Kris and asked him to cook it and then ran back out to go pick up the kids. Does that count? I FEEL like I made dinner. I mean I was sweating from all the running around...
Anyhoopdeedoo, (ooh spell check doesn't like that word...) I did realize at 1:00 I needed to make dinner for realz tonight so I went to the Hannaford's and bought myself some boneless chicken breast. Darn those are expensive. But only the best for my little darlings. When I got home, I threw them in the crockpot (SPLAT!) and then dumped in a can of Campbell's Tomato soup, a can of water, and diced tomatoes. I drained them the smart way this time:

I also added a dash of oregano, a pinch of basil, and chopped 2 cloves of garlic. I put a tiny pinch of turmeric in and then stopped because I don't know if my kids would have eaten it. I'll save Indian flavoring for a night when its just Kris and I.
I started the crack pot around 1:30 and let it cook till 5:30 and it was DONE. Sweet. I got everyone to the table around 6 and set my masterpiece in front of them. Then I realized that all we had was a chunk of chicken and some watery tomato juice. I completely forgot to make something for it to go on like rice, or noodles. I had a fleeting though of throwing pasta in and apparently it evaporated. Oops.
Everyone either liked it or pretended to like it. That's good enough for me.
